Aam Papad is very popular and tasty snack. It is good way to store Mangoes for a longer duration and relish the taste of Mango even if season is over. It is very simple recipe and can be prepared in very less time. Kids love it very much. Some people use it as jelly in some drinks, can use as a topping for bakery dishes or other desserts, some prepare side dish using it by adding some spices, tamarind and add seasoning to it then cook it with some water. For me it taste good if you chew it as is. Please try this simple 2 ingredient recipe and let me know your thoughts about it.
Ingredients: 2 Mangoes puree, 100 gms Sugar and Little Ghee
Step 1 – Cut Mangoes and Puree it
Step 2 – In Non-stick Pan, Add Mangoes paste and Sugar powder
Step 3 – Cook for 6-8 min until it thickens
Step 4 – Grease a plate with ghee
Step 5 – Spead Mango mixture in thick layer
Step 6 – Let it dry in Sun light or under fan for 2-3 days
Step 7 – Cut it in Desired Shape. Aam Papad is ready. Can store it for 3 months as is and in refrigerator for 6 months.
Tips
1. Any Sweet Mangoes can be used for Papad but Alphonso Mangoes give much better taste.
2. Puree Mangoes without adding any water to it
3. Cook Mango Puree and Sugar very well until color changes and puree thickens
4. Spread in plate and cool it down and let it dry in sunlight or under fan, cover it with Sieve or cotton cloth
